Mediterranean Quinoa Bowl :
Yields: 4 servings Prep time: 20 minutes Cook time: 25 minutes
Ingredients:
- 1 cup quinoa, rinsed
- 1 tablespoon olive oil
- 1 small red onion, chopped
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
For the dressing:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- 1/2 clove garlic, minced
- Salt and pepper to taste
Instructions:
Cook the quinoa:
- In a saucepan, combine the quinoa and 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until tender and the liquid has been absorbed.
Prepare the dressing: 2. In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper.
Cook the vegetables: 3. Heat the olive oil in a large skillet over medium-high heat. Add the red onion and bell pepper and cook for 5-7 minutes, or until softened.
Assemble the bowls: 4. Divide the cooked quinoa among 4 bowls. 5. Top with the cooked vegetables, cherry tomatoes, feta cheese, parsley, and mint. 6. Drizzle with the dressing.
