Grilled Chicken and Sweet Potato Meal Prep
Yields: 4 servings Prep time: 30 minutes Cook time: 20-25 minutes
Ingredients:
For the marinade:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
For the meal:
- 1 pound boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cut into wedges
- 1/2 cup mixed vegetables (broccoli florets, bell pepper strips, carrots)
Instructions:
Prepare the marinade:
- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
Marinate the chicken: 2. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. 3. Make sure the chicken is evenly coated in the marinade, then refrigerate for at least 30 minutes, or preferably overnight.
Prepare the grill: 4. Preheat your grill to medium-high heat.
Grill the chicken: 5. Remove the chicken from the marinade and discard the excess marinade. 6. Place the chicken on the preheated grill and cook for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
Grill the sweet potatoes and vegetables: 7. Toss the sweet potato wedges and mixed vegetables with a little olive oil, salt, and pepper. 8. Place them on the grill next to the chicken and cook for 10-15 minutes, or until the sweet potatoes are tender and the vegetables are crisp-tender.
Assemble the meals: 9. Divide the grilled chicken, sweet potatoes, and vegetables among 4 meal prep containers. 10. Store the meals in the refrigerator for up to 3 days or freeze for longer storage.
To reheat: 11. Microwave the meals for 2-3 minutes, or until heated through.
